BREAKFAST, LUNCH, DINNER OR DESSERT...
ingredients:
2 pounds white corn flour precooked
2 1/2 cups warm water
3 1/2 cups of warm milk
2 tablespoons sugar
2 tablespoons butter
Salt to taste
2 pounds of cheese cut into 1 inch long by 1/4 wide (preferably used Colombian - paisa - but if you do not find, use Mexican cheese, Venezuelan or Panamanian)

Preparation:
Mix the flour, sugar and salt in a bowl. Add all the milk and gradually the water while mixing with the other hand
When the dough has consistency, incorporating the butter and knead gently until mixture firm, smooth, without lumps
Let stand for 5 minutes
Divide the dough into small or medium (preferably smaller than your fist)
Making the dough balls one by one and flatten to shaping wheel or disk. You can do this by slapping alternative of one hand against the other, so that they will mold a wheel of mass. Keep doing this and remember to always do it in a circular motion, until you get the desired thickness; reserve on a plate.
When all circles are ready, take the pieces of cheese and set one by one in the center of each of the wheels of dough. Then place another round of dough over the cheese so that it is covered.
To paste the two wheels of dough and form the arepa stuffed with cheese, run your fingers lightly dampened in water over the edge, to shape curved while close.
Heat over high the "griddle", or else the plate, and place the arepas on it until they turn golden brown on both sides.
